Pasta with Vodka Sauce

4 Tbsp olive oil
4 cloves garlic, minced
2 14-1/2 oz cans petite cut diced tomatoes
Dried parsley, basil and oregano, to taste
1 cup half and half
1/4 cup Vodka
16 oz. pasta (penne shown here)
Grated Romano or Parmesan cheese

At least an hour before you want to serve (because the longer
this sauce cooks, the better)::

In a medium saucepan, heat oil and lightly saute garlic over
medium-low heat.

Add tomatoes and seasonings, bring to a boil, reduce heat, cover and simmer until about half an hour before you're ready to serve.

While the water is heating for the pasta, add the half and half and Vodka to the sauce and continue to simmer.

Cook the pasta according to package directions.  Drain and toss with sauce.  Serve with cheese.
