| Batter-Fried Fish Filets 1 to 1-1/2 lbs. fish filets, rinsed and patted dry, cut into serving-size pieces 1 cup flour 2 tsp salt 2 eggs 1/2 cup water 2/3 cup olive oil Whisk together the flour, salt, eggs and water to form a pancake-like batter. Heat the olive oil over medium heat. Dip fish filets in batter to coat. Fry in olive oil, turning once, until dark golden brown on both sides. |
